Wholesome Teriyaki in 5 Minutes

A more elaborate recap of one of the Mai Kai session demos we had late last month. Mai Kai team member Myah provided us with yet another easy Japanese flavour based recipe! She demoed this using our Organic Tofu available at Mai Kai, but mentioned this is a basic recipe that can be used across any protein or meat of your choice!

“Teriyaki flavoring is one of the easiest and quickest seasonings to add onto any protein or even vegetable (and is my absolute favourite). My mum always used this recipe to make our kai for us growing up, it is definitely a staple in my household and a staple of my childhood. From Teriyaki Chicken to go in our Sushi, to stirred vegetables on rice, Teriyaki is a go-to.”

Ingredients:

  • Soy sauce
  • Mirin (Sweet rice wine)
  • Minced Ginger
  • Minced Garlic
  • Brown sugar (I always love to add brown sugar to mine, but mum insists the Mirin is sweet enough)
  • Sesame seeds

To marinate:

Combine all ingredients into a bowl and add in your choice of protein. For Tofu, you don’t need to worry about marinating it long as the Tofu is quite absorbent and can soak it all up quickly, but for Chicken I would recommend giving it a couple hours at least to soak up all the goodness. Once marinated, fry and serve! Add sesame seeds as you fry or sprinkle on top.

To cook with immediately:

Combine all ingredients into a bowl and add in your choice of protein. Once you have mixed your protein in with the ingredients and everything is nicely coated, throw everything straight into the frying pan and let it go! You don’t often get this problem after marinating, but when cooking immediately you may be left with some excess sauce. Either let this simmer out or add a cornflour/water thickening mixture in and watch the magic happen. Add sesame seeds as you fry or sprinkle on top.

To use as a sauce only:

To make a delicious, thick Teriyaki sauce, all you have to do is combine all those same ingredients and add onto a low/medium heat in a pan. Once this has come to a simmer, add a cornflour/water thickening mixture (1pt cornflour, 2pts water) and slowly stir in. Add slowly and mix before adding again. Keep a close eye on the consistency as the mixture can thicken faster than you think! Once you are happy with the consistency, turn off the heat and let cool. Add your sesame seeds and voila! Pour over your chicken on rice or anything you just want to add a yummy finishing touch to. Keep sealed and store in the fridge for later!
