Myah's refreshing Miso and Sesame dressing!

One of our goals at Mai Kai is to introduce our whānau to ingredients they may not have ever normally used before, and this week we had a beautiful Miso paste available. Miso is commonly associated with Miso soup (a crowd favourite) but at this past Thursday's session, our Mai Kai team member Myah wanted to share how versatile Miso is through a demo, and her favourite ways to use it! 

"I absolutely love sharing my culture with others and I was so excited to see this traditional Japanese ingredient available through Mai Kai! It makes me so sad that no one knows how versatile it is! Miso paste is so delicious and used in so many dishes across Japan... not just in Miso soup! It is one of my all time favourite Japanese flavours to pair with なまやさい ('Namayasai'-Raw Vege) and even in a cold noodle dish as the weather starts to warm up! I have taken inspiration through my favourite side dish: もろきゅう('Morokyu'-Miso & Cucumber) and created this delicious, versatile and refreshing Miso and Sesame dressing based on that vibe, that you can pair with ANYTHING! As my mum says: 'みそはなんでもあうね' (Miso really goes well with anything)."

Ingredients: (Just suggestions, measure from the heart!)

  • 2 heaped Tbsp Miso Paste
  • 1-2 Tbsp Tamari Soy sauce
  • 1-2 Tbsp Sesame Oil
  • 1-2 Tbsp Rice Wine Vinegar
  • 1 heaped Tsp Honey dissolved in 1/4 cup warm water
  • 1 Tbsp Sesame seeds

Optional:

  • Lemon or Yuzu juice to taste
  • 1 Tsp minced Ginger

Method:

Simply combine all ingredients into a small bowl and mix until smooth! Taste as you go and depending on your desired consistency, add or reduce ingredients. For a thicker consistency I add extra miso and less water with the honey, and for a runnier salad dressing consistency, I add more water.

Serving suggestions:

Myah: "As a salad dressing, dip for Carrot/Cucumber sticks or over a bowl of cold noodles is my go to! You can even use it as a marinade for Fish or Chicken."

Myah's Mum: "You can use it for anything! Raw Vege, a Tofu topping, dip for Vietnamese rice paper rolls, Gyoza (dumpling) sauce, even meat! Karaage Chicken, even pork and beef!"
