"Let them eat CABBAGE!" Simple Okonomiyaki recipe

Let them eat CABBAGE! Lucy got the job of finding some cabbage recipes
for the whānau and has been playing with an Okonomiyaki savoury Pancake recipe
for the kai demo at this past Wednesday's session. "DAMN THEY ARE GOOD!” Was her response. The recipe has been adapted from the Love & Lemons blog, visit

You will need -

1/2 medium finely shredded cabbage finely shredded, (use a mandolin if
you have one)

1⁄4 cups chopped spring onion

1 cup breadcrumbs

Dash of sea salt

3 large eggs, beaten

oil, for brushing

In a large bowl, combine the cabbage, onion,  breadcrumbs, and salt.
Gently mix in the eggs. The mixture will be very loose and cabbagey, not
like a flour pancake batter.

Heat a nonstick pan over medium heat. Brush with olive oil and use a
1⁄4 measuring cup to scoop the cabbage mixture into the pant. (It's ok
if it doesn't seem cohesive, it'll bind together as the egg cooks).
Flatten gently with a spatula so that the mixture is about 1/2 inch
thick. Cook for 3 minutes per side, or until browned, turning the heat
to low as needed. Repeat with the remaining mixture, wiping out the pan
and brushing with more oil as needed.

Drizzle the okonomiyaki with Worcestershire sauce and thin strips of
squeezed mayo. Top with all or any of the following - sesame seeds,
pickled ginger, nori and micro greens.  Serve hot.
